MU Extension Salsa Canning Class
University of Missouri Extension will be offering food preservation and canning programs this summer. To make the most of your garden’s delights, it is important to have up-to-date food preservation information. Processing fruits and vegetables using outdated methods may not give you the best quality and may be unsafe to eat. The USDA and University of Missouri Extension are credible sources to provide information on food preservation to consumers.
These sessions will provide information on how to safely preserve sweet spreads (jams and jellies), how to safely can salsa, how to freeze and dry fruits and vegetables, and how to safely pressure can vegetables. Each class will include a hands-on demonstration of equipment and materials and MU Extension publications with recipes will be available for all participants. Freezing and drying fruits and vegetables session and pressure canning vegetables class will be announced at a later date.
Water Bath Canning of Fruit & Salsa classes will be held from 6:00 to 8:30 pm at the following locations:
- Camden County: Monday, July 27, Camdenton United Methodist Church, 340 W US Hwy 54, Camdenton
- Pulaski County: Wednesday, July 29, Waynesville St. Robert Senior Center, 1401 Ousley Rd., Waynesville
- Laclede County: Thursday, July 30, Lebanon First United Methodist Church, 300 N. Madison Ave., Lebanon

The cost is $15 per person per class to cover food preservation handouts and supplies. Registration is required at least one day prior to the date of the class session. Please call your local extension office if you have questions or to pre-register.
